Essentially, you are paying extra for eggs that do not conform to organic standards for outdoor access. Producers are creating “minute enclosed porches, with roofs and concrete or wood flooring, and calling these structures ‘the outdoors,’” The Cornucopia Institute said.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Why should you care?&lt;br /&gt;Besides the obvious markup on organic eggs from brands that fall short of meeting organic standards, studies have shown the “nutritional superiority of eggs when the birds have an opportunity to eat fresh forage, seeds, worms and insects,” according to Cornucopia. Plus, large scale producers are pushing out family farmers with unethical practices.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Who’s on the list of ethically deficient egg farmers?&lt;br /&gt;Two of the biggest, according to Cornucopia, are Eggland’s Best and Horizon Organic. See the full list of ratings and determine if the price you pay for these eggs may be all in the name.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;How free-range eggs may be healthier:&lt;br /&gt;Dr. Joseph Mercola, founder of the natural health website mercola.com, says free-range eggs may contain:&lt;br /&gt;&lt;br /&gt;    * 1/3 less cholesterol&lt;br /&gt;    * 1/4 less saturated fat&lt;br /&gt;    * 2/3 more vitamin A&lt;br /&gt;    * 2 times more omega-3 fatty acids&lt;br /&gt;    * 3 times more vitamin E&lt;br /&gt;    * 7 times more beta carotene&lt;br /&gt;&lt;br /&gt;What can you do?&lt;br /&gt;1. Consult the Cornucopia scorecard to make sure you buy eggs from highly-rated brands that are ethically and nutritionally up to standard.&lt;br /&gt;&lt;br /&gt;2. Always choose organic over conventional supermarket eggs. The Cornucopia Institute says: “Organic eggs, even those from industrial-scale organic producers, come from hens that were fed an organic diet, free of genetically engineered ingredients and synthetic pesticides.”&lt;br /&gt;&lt;br /&gt;3. Go to a reputable health food store and get free-range eggs there. The term “free range” is unregulated and in no way guarantees the chickens were outdoors on a pasture. Chard has a thick, crunchy stalk to which fan-like wide green leaves are attached. The leaves may either be smooth or curly, depending upon the variety, and feature lighter-colored ribs running throughout. The stalk, which can measure almost two feet in length, comes in a variety of colors including white, red, yellow and orange. It is a very good source of copper, calcium, vitamin B2, vitamin B6 and protein. In addition, Swiss chard is a good source of phosphorus, vitamin B1, zinc, folate, biotin, niacin and pantothenic acid.&lt;br /&gt;&lt;br /&gt;HEALTH BENEFITS IN DETAIL&lt;br /&gt;&lt;br /&gt;phytonutrients (particularly anthocyans), plus fiber in this food seems particularly effective in preventing digestive tract and colon cancers. Research suggests that Swiss chard may confer a protective effect on the kidneys of those with diabetes through reducing serum urea and creatinine levels.&lt;br /&gt;Swiss chard is important for maintaining bone health. Vitamin K1 helps prevent excessive activation of osteoclasts, the cells that break down bone. Addiitonally, friendly bacteria in our intestines convert K1 into K2, the form of vitamin K that activates osteocalcin, the major non-collagen protein in bone. Osteocalcin anchors calcium molecules inside of the bone.&lt;br /&gt;Vitamin A and high beta-carotene content in swiss chard protects vision, fights cancers and promotes lung health. Vitamin C provides immune system support and Potassium is an important electrolyte involved in nerve transmission and the contraction of all muscles including the heart, essential for maintaining normal blood pressure and heart function. The list goes on with Iron, vitamin E, Manganese, Riboflavin and B6, and more.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;p&gt;&lt;a href="http://4.bp.blogspot.com/_C9LlMnTmGFY/Sf8pi1XbYBI/AAAAAAAAASo/f1t5Ajl_77Q/s1600-h/Swiss+Chard+Nutrition+Chart.bmp"&gt;&lt;img style="TEXT-ALIGN: center; MARGIN: 0px auto 10px; WIDTH: 337px; DISPLAY: block; HEIGHT: 400px; CURSOR: hand" id="BLOGGER_PHOTO_ID_5332026162247589906" border="0" alt="" src="http://4.bp.blogspot.com/_C9LlMnTmGFY/Sf8pi1XbYBI/AAAAAAAAASo/f1t5Ajl_77Q/s400/Swiss+Chard+Nutrition+Chart.bmp" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;RECIPES&lt;br /&gt;&lt;br /&gt;SAUTEED SWISS CHARD&lt;br /&gt;Ingredients&lt;br /&gt;1 large bunch of fresh Swiss chard&lt;br /&gt;1 small clove garlic, sliced&lt;br /&gt;2 Tbsp olive oil&lt;br /&gt;2 Tbsp water&lt;br /&gt;Pinch of dried crushed red pepper&lt;br /&gt;1 teaspoon butter&lt;br /&gt;salt&lt;br /&gt;&lt;br /&gt;Method&lt;br /&gt;1 Rinse out the Swiss chard leaves thoroughly. Remove the toughest third of the stalk, discard or save for another recipe. Roughly chop the leaves into inch-wide strips.&lt;br /&gt;&lt;br /&gt;2 Heat a saucepan on a medium heat setting, add olive oil, a few small slices of garlic and the crushed red pepper. Sauté for about a minute. Add the chopped Swiss chard leaves. Cover. Check after about 5 minutes. If it looks dry, add a couple tablespoons of water. Flip the leaves over in the pan, so that what was on the bottom, is now on the top. Cover again. Check for doneness after another 5 minutes (remove a piece and taste it). Add salt to taste, and a small amount of butter. Remove the swiss chard to a serving dish.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;CRISS CROSS SWISS CHARD AND STEAK&lt;br /&gt;2 lbs. Round steak&lt;br /&gt;12 lg. swiss chard leaves&lt;br /&gt;10 cloves garlic, minced&lt;br /&gt;salt &amp;amp; pepper&lt;br /&gt;parsley flakes&lt;br /&gt;3 ripe tomatoes&lt;br /&gt;1/4 c. oil&lt;br /&gt;&lt;br /&gt;Wash and clean swiss chard and set aside to drain. Cut steak in square pieces. Season with salt, pepper, parsley flakes and minced garlic.&lt;br /&gt;&lt;br /&gt;Wrap each piece of steak with two pieces of swiss chard, criss crossed, roll and tie with household string.&lt;br /&gt;&lt;br /&gt;Lightly brown about 5 cloves of garlic in oil. Use a large roasting pan. Place rolled steak and chard in pan adding 3 cut ripe tomatoes on top. Simmer covered for about 1 hour. Uncover and cook another 15 minutes until excess water evaporates.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;SWISS CHARD OR SPINACH PIE&lt;br /&gt;&lt;br /&gt;2 1/4 lbs. Swiss chard or 2 1/2 lbs. spinach&lt;br /&gt;6 eggs&lt;br /&gt;2 1/2 or 3 dry onions, sliced, sauteed in 1/4 c. olive oil until soft&lt;br /&gt;2 bunches green onions, chopped&lt;br /&gt;1 1/2 lb. feta cheese, crumbled&lt;br /&gt;1/4 c. Parmesan cheese&lt;br /&gt;1 tsp. white pepper&lt;br /&gt;1/2 tsp. dill (optional)&lt;br /&gt;6 pastry sheets&lt;br /&gt;3 squares butter, melted&lt;br /&gt;1/4 c. olive oil&lt;br /&gt;&lt;br /&gt;Mix oil and melted butter together after butter has cooled.&lt;br /&gt;Clean and wash Swiss chard or spinach, drain, dry completely. Chop Swiss chard or spinach, green onions, put in large mixing bowl with the sauteed onions. Add crumbled cheese, Parmesan, add slightly beaten eggs to mixture, white pepper and dill. Mix well.&lt;br /&gt;&lt;br /&gt;Grease an 11 1/2 x 17 1/2 inch baking pan with butter and oil mixture. Add 6 pastry sheets on bottom of greased pan, spread each with the oil and butter mixture, sprinkle with the Swiss chard or spinach mixture alternating the pastry sheets and spinach or Swiss chard mixture. Cover with 6 individually buttered sheets. Pour the remaining butter and oil on top. Bake at 350 degrees for 1 hour. The color of the egg shell is not related to quality, nutrients, flavor or cooking characteristics.&lt;br /&gt;&lt;br /&gt;White shelled eggs are produced by hens with white feathers and white ear lobes while brown shelled eggs are produced by hens with red feathers and red ear lobes. Brown egg layers are usually slightly larger and require more food, thus brown eggs usually cost more than white eggs.&lt;br /&gt;&lt;br /&gt;There are 150 species of chicken and the chicken is one of the first domestic animals, appearing in China around 1400 BC.&lt;br /&gt;&lt;br /&gt;Are these eggs too old? -- How to Test for Egg Freshness&lt;br /&gt;As an egg ages it gets lighter by evaporation of water through the porous shell, causing the growth of the air space. A fresh egg is heavy and should feel well filled. Hence, the old water test for freshness: a fresh egg sinks and an old egg floats. When broken, the white of a fresh egg should be compact around the yellow. As it gets older, it spreads out. Holding it up to the light can also test the freshness of an egg. A very small air chamber indicates a very fresh egg. A fresh egg yolk is dark yellow to orange and rich in color. Randol Ridge Ranch always gaurantees these characteristics in our fresh eggs. Typically, commercial eggs reach the store within a number of days of being laid. Eggs should be used within 1 month and kept under the conditions described.&lt;br /&gt;&lt;br /&gt;Tips on Cooking Boiled Eggs:&lt;br /&gt;Place eggs in a pot of cold water. To avoid cracking the eggs place them in the pot with a spoon. Turn on the heat and wait until the water has come to a boil. Cover the pot, then turn off the flame. Kumquats have been called "the little gold gems of the citrus family". They are believed to be native to China. Kumquats have a very distinctive taste. It is the only citrus fruit that can be eaten "skin and all." The peel is the sweetest part and can be eaten separately. The pulp contains the seeds and juice, which is sour. When eaten together, you get a sweet and sour taste which is unlike anything else. The seeds, however, should not be eaten. They are similar to the seed of the orange and have a distinctive green color. The seeds also contain pectin, which can be removed by boiling for use in making jams and jellies. &lt;br /&gt;&lt;br /&gt;How are Kumquats Used?&lt;br /&gt; &lt;br /&gt;Kumquats can be used in as many ways as your imagination will allow! Kumquats are eaten as a snack or with other food such as sandwiches to add an exciting tangy flavor.  Fresh kumquats can be used in flavoring bread, cakes, cookies, pies, and cheese cake. Kumquats in sauces, marmalade, jelly, and glaze are exceptionally tasty and are a particular treat as a topping for bread, biscuits, and cakes. Kumquats are used in flavoring other foods and are particularly good when cooked with chicken, pork, or fish. They add both flavor and color to the dish. Kumquat Chutney is especially delicious served over cooked ham.&lt;br /&gt;&lt;br /&gt;Preserved kumquats are served as a dessert in many restaurants as a specialty item. The kumquat fruit can be stored in the refrigerator for up to three weeks. They can surround fish dishes or add visual appeal to other meats. They can be tied into swags, Christmas wreaths, and placed among other table decorations.&lt;br /&gt;For delicious Kumquat recipes, look below!&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Kumquat Chutney Recipe&lt;br /&gt;&lt;br /&gt;1 cup chopped kumquats (pureed)&lt;br /&gt;1/2 cup raisins&lt;br /&gt;1 tsp mustard seed&lt;br /&gt;1 cup brown sugar&lt;br /&gt;1/4 cup chopped almonds or pecans&lt;br /&gt;1 cup vinegar&lt;br /&gt;Mixed spices to taste&lt;br /&gt;&lt;br /&gt;DIRECTIONS:&lt;br /&gt;&lt;br /&gt;1.  Cook chopped kumquats until tender. &lt;br /&gt;2.  Drain and add raisins, brown sugar, mustard seed, nuts and spices.  &lt;br /&gt;3.  Stir and cook for 15 minutes. &lt;br /&gt;4.  Add cup of vinegar and cook for an additional 15 minutes. &lt;br /&gt;5.  Place in jars and refrigerate.  &lt;br /&gt;&lt;br /&gt;Especially good when served with ham.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Kumquat Oatmeal Cookies Recipe&lt;br /&gt;&lt;br /&gt;INGREDIENTS:&lt;br /&gt;2/3 cups margarine&lt;br /&gt;2/3 cups brown sugar&lt;br /&gt;2 large eggs&lt;br /&gt;1-1/2 cups oatmeal&lt;br /&gt;2/3 cup white chocolate chips&lt;br /&gt;2 cups flour&lt;br /&gt;1 tsp. baking soda&lt;br /&gt;1 tsp. salt&lt;br /&gt;2/3 cup chopped kumquats (pureed)&lt;br /&gt;&lt;br /&gt;DIRECTIONS:&lt;br /&gt;1.  Beat margarine and sugar until fluffy. &lt;br /&gt;2.  Add eggs to the mixture and mix well.  &lt;br /&gt;3.  Combine oatmeal, flour, baking soda and salt. Mixing well.  &lt;br /&gt;4.  Add chopped kumquats and chocolate chips.  &lt;br /&gt;5.  Drop by large teaspoon onto ungreased cookie sheets. &lt;br /&gt;6.  Bake 10-15 minutes at 375 degrees or until golden brown. &lt;br /&gt;Makes 2 and 1/2 dozen cookies. &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Carrot Salad With Kumquats Recipe&lt;br /&gt;&lt;br /&gt;INGREDIENTS:&lt;br /&gt;2 pounds carrots (peeled and trimmed weight--2½ pounds unpeeled, 10 carrots), peeled, coarsely grated (about 7 cups) &lt;br /&gt;6 green onions, chopped (8 if small) &lt;br /&gt;3 tablespoons minced fresh parsley &lt;br /&gt;16 kumquats, quartered lengthwise, seeded, sliced 1/8" crosswise &lt;br /&gt;3 tablespoons white wine vinegar &lt;br /&gt;1 tablespoon grated lemon peel &lt;br /&gt;2 teaspoons Dijon mustard &lt;br /&gt;½ teaspoon sweet paprika &lt;br /&gt;½ cup olive oil &lt;br /&gt;Salt and pepper to taste &lt;br /&gt;8 whole red cabbage leaves&lt;br /&gt;&lt;br /&gt;DIRECTIONS:&lt;br /&gt;1.  Mix carrots, green onions, parsley and kumquats in large bowl to blend. &lt;br /&gt;2.  Whisk vinegar, lemon peel mustard and paprika in small bowl to blend. &lt;br /&gt;3.  Gradually whisk in oil. (Or, use blender to mix and add oil.) &lt;br /&gt;4.  Season to taste with salt and pepper. Pour dressing over carrot mixture. Toss to coat evenly. &lt;br /&gt;5.  Cover and refrigerate at least 2 hours. (Can be prepared 8 hours ahead. Keep refrigerated. &lt;br /&gt;6.  Let stand 1 hour at room temperature before serving.) &lt;br /&gt;7.  Spoon salad into cabbage leaves; arrange on individual serving plates or all on platter and serve. &lt;br /&gt;8 Servings. We harvested an 11 pound "spaceship cabbage" (as we call it) yesterday afternoon. The cabbage came from what we thought was regular cabbage seed but grew to be saucer shaped and enormous in size. With organic gardening you always come out with something very interesting. In case you were wondering...the cabbage is delicious! We made our famous RRR Oriental cabbage salad with it, a family favorite where everyne has seconds. His name is Chief and he is a mini Mancha goat. He is going to be our stud which we breed to our doe Ellie (when she reaches ten months of age). Mini Manchas are very small with tiny little gopher ears. Chief is a very sweet natured boy and loves to be scratched and snuggled. He is black and white with blue eyes and looks like a panda bear. He also has a pair of "waddles", two little earring folds of skin on each side of his neck.
